Chocolate Almond cookies
Updated: Jun 15, 2019

This recipe was shared by a dear friend who shares my passion for baking.
I made only a small alteration of reducing the fat content in the recipe she shared and added a little splash of milk which worked well too.
Addition of almond flour gives an amazing granulated texture and keeps you guessing about the secret ingredient. There are numerous variations possible from this recipe by adjusting few ingredients. I have listed the variations below.
Ingredients -
3/4th cup butter - can add butter and nut butter of choice half and half
1/2 cup brown sugar
1 egg
vanilla essence
1 and 1/2 cup plain flour
Cocoa powder 2 spoonfuls
1/3 cup chocolate chips
1-2 pinches sea salt
A splash of milk
Method -
Beat butter and sugar together
Mix in the flour, egg, salt, cocoa powder and vanilla essence
Add choco chips
Bring together into a dough. This will be fairly stiff, however you can add a couple of spoons of milk if the dough is too dry
Shape into balls, flatten and keep on baking sheet leaving enough space as the cookies will expand upon baking
Bake at 180 degrees for about 10 to 12 minutes.
For variations -
Choco chip and Almond - skip cocoa powder, add almond flavour 1 teaspoon. For the flours, add 1 cup plain flour with 1/2 cup almond flour. Top with amlond flakes before baking
Berry blast - skip cocoa powder, add dried cranberries / blueberries instead of chocolate chips
