Chocolate biscotti


Ingredients:

  • 4 tablespoons unsalted butter (approx 80 grams)

  • 1 cup approx 160 grams sugar

  • 3 cups flour (can use half and half), approx 340 grams 

  • 1/2 teaspoon salt

  • 2 large eggs

  • 2 tablespoons cocoa powder

  • 1/2 cup chocolate chips

  • 2 teaspoons of vanilla extract

  • 2 tablespoons milk

  • 1 teaspoon baking powder


Directions:

  1. Preheat the oven to 180 degrees C.

  2. In a bowl, mix together cocoa powder, salt, flour and baking powder.

  3. In a mixing bowl, cream butter and sugar for about 5 mins until the mixture is light· 

  4. Add the flour mix to the butter mixture alternating with eggs· Add milk if the dough appears to be very dry

  5. Once all dry mixture is used up, add the choco chips, vanilla extract and mix until combined. Lightly knead into a dough·  Transfer the dough to a lightly floured table top and shape it into a 12-inch-long log. (you can make a broad long log or 2 logs of lesser width depending on your choice of biscotti length)

  6. Carefully transfer the log to the prepared baking tray and bake for 20 minutes.

  7. Baking time may vary by a couple of minutes depending on oven, baking tray and log height. We are looking for a golden, set log - firm but not hard to touch· 

  8. Leaving the oven on take the log out and cut the log on the diagonal into 1/2 -inch-thick slices. Place the biscotti cut side up on the baking tray and bake for an additional 6-7 minutes each side.

  9. Cool  on a wire rack. These are now ready to be devoured, however, if you want to impress your guests just go for an additional dash of chocolate on top
