Chocolate Chip Muffins

If there is one go-to recipe I would vouch for it is this! When in hurry and in need of some quick-whip no fail cakes, whether it is for breakfast or to serve to guests, these choco-chip muffins are always to the rescue. It hardly takes 45 minutes to makes these cuties from start to finish and the list of ingredients is also very forgiving. The recipe can easily be modified to plain vanilla muffins, chocolate muffins or Tutti-fruti muffins. Ingredients - 120 gm or half cup powdered sugar 120 gm or one full cup plain flour 120 gm butter - or 60 gm butter with 60 gm vegetable oil 2 big eggs 2 tablespoons milk 1 teaspoon baking powder Half teaspoon baking soda One pinch of salt 1 teaspoon vanilla essence 40 gm Chocolate chips Method - 1. Preheat oven to 180 degrees and line cup cake moulds with cup cake liners. If you do not have liners, you could make few by using baking paper or simply apply a coat of melted butter to your moulds 2. In a bowl, mix flour, baking powder and salt. Keep aside. 3. In a big mixing bowl, cream butter and sugar till light. Add one egg and whisk, then add the second egg and whisk lightly. 4. The batter needs to be lightly whisked post this, so use a spatula to fold in the flour mix instead of using electric whisk to avoid over-mixing. 5. Add vanilla essence, milk and fold in. Add baking soda and fold in. 6. Add half of the chocolate chips in the ready batter and mix to distribute evenly. 7. Pour scoop full in the lined mussing moulds or tray and sprinkle remaining chocolate chips on top. 8. Bake for 15-18 mins. Check after this time and bake again for 3-5 mins as required till toothpick inserted comes out clean. 9. De-mould and serve Skip the chocolate chips if you go for plain vanilla muffins. If you are in mood for a double-chocolate treat then remove 20 gms flour and replace it with good quality cocoa powder. Follow rest of the recipe as above. You can also use tutti-fruti instead of choco-chips to make the all time favourites.
