Eggless Marble loaf




A tea cake simply elevates a humble cup of tea to the next level. I always prefer loaf cakes over heavily frosted cakes as the real fun is in the sponge in my opinion. This perfect marble cake is my go-to recipe for a quick loaf cake. Just bringing the vanilla and chocolate together along with a few swirls brings in the mystical magic to this beautiful cake


Ingredients -

  • 1.5 cups (180 gm) flour

  • 2 tablespoons corn flour

  • 1 teaspoon baking powder

  • 0.5 teaspoon baking soda

  • A pinch of salt

  • 3/4th cup (approx 160 gm) powdered sugar

  • 1/3rd cup softened butter or oil (80 ml)

  • 2-3 tablespoons cocoa powder (25 gm)

  • 2 teaspoons Vanilla extract

  • 3/4th cup milk

  • 1/2 cup curd/yogurt

  • 1 tablespoon lemon juice

Method -

  1. Preheat oven to 180 degrees and line the baking tin with baking paper

  2. In a bowl, sift flour, corn flour baking powder, soda and salt

  3. Mix curd and milk, stir in lemon juice and keep aside

  4. In another bowl, whisk butter/oil and sugar till light

  5. Add flour to the butter mix and fold in by gentle whisk

  6. Continue adding flour and milk mixture in an alternating way ending with flour

  7. Divide the batter into two halves

  8. Add vanilla extract to one half and fold in

  9. Now to the other half, add cocoa powder and fold in lightly. Add 1-2 tablespoons milk to make the batter similar in consistency to the vanilla batter

  10. Put dallops of alternating cocoa and vanilla batter in the baking tin

  11. Swirl through the batter using a tooth pick in circular motions to mix up the two batters creating marble effect

  12. Bake for approx 30-35 mins depending on oven setting

  13. Let cool in the pan for 5 mins before taking out
