Eggless Strawberry and plum crumble

For the filling -

  • 10-12 medium sized strawberries, cored and chopped into slivers

  • 4 ripe plums, cored and chopped into slivers

  • juice and zest of 1 lemon

  • 1-1.5 tablespoons brown sugar

For the crumble-

  • 70 gm softened butter

  • 3/4th cup rolled oats

  • 1/2 cup sugar

  • 1/2 cup whole wheat flour

  • 1 teaspoon vanilla extract

Method: To make the filling -

  1. Cut the fruits into fine slivers

  2. In a bowl, sprinkle 1-2 tablespoons of brown sugar over the fruits

  3. Add juice of 1 lemons, add zest and lightly toss

  4. keep aside for up to 15 minutes for the flavours to develop

To make the crumble-

  1. In a bowl, mix all ingredients except the optional chocochips/nuts together.

  2. Rub with hands till you get a crumbly texture

  3. Keep aside

  4. Assemble the marinated fruits in a deep baking dish/casserole.

  5. Top with a generous layer of crumble

  6. Bake for about 25-30 mins at 180 degrees

  7. If the top starts browning, cover with a tin foil and continue to bake

  8. Serve warm with a dallop of vanilla icecream on the side
