Fudgy drunken brownies




Ingredients

For the brownies

  • 3/4th cup flour

  • 2 tablespoons cocoa powder

  • 1/2 cup brown sugar

  • 1/2 cup , approx 60 grams butter

  • 3/4th cup chocolate, shredded

  • salt

  • 1/4th teaspoon baking powder

  • brandy 50 ml

  • 2 eggs

  • 1/4th cup cream + 1 tablespoon yogurt or 1/4th cup sour cream

  • 1/2 cup dried cranberries or nuts of choice - optional

For the glaze

  • 75 gm chocolate chunks or chocochips

  • 2 teaspoons butter

  • a splash of brandy

  • 1-2 tablespoons cream

Method:


  1. Melt chocolate plus butter in a double boiler. Add pink salt

  2. Add sugar and cocoa powder, leave to cool to room temperature

  3. Mix baking powder to flour

  4. Beat in eggs one at a time

  5. Add flour, fold in the batter

  6. Add brandy and cranberries

  7. Pour in a lined square tin (6x6 inch square for this quantity) and bake for 20-22 mins at 180 degrees


To make the glaze

  1. Melt chocolate chunks and chips in a double boiler, add a tablespoon of butter.

  2. As the chocolate and butter melts, add cream and stir to mix it well

  3. Remove from boiler

  4. Add a splash of brandy - to taste

  5. Spoon on the brownies when they are just out of oven
