Orange Marmalade Cake

I was wondering what to do with the orange marmalade sitting in my fridge and refusing to recede below the 1/3rd bottle level. Finally a quick search on the net and few tricks of my own led me to this amazing recipe resulting into the most gorgeous sponge ever.  If you are not a very big fan of lemon drizzle cake as it can be a bit too tangy sometimes, this one is definitely the one to bet your money on.


So here is the recipe - Ingredients

For the cake -

  • 150 gm unsalted butter, softened

  • 150 gm sugar

  • 150 gm  flour

  • 1/2 teaspoon baking powder

  • 2 pinches of salt

  • 2 large eggs

  • 2 tablespoons honey

  • 3-4 tbsp water

  • 3 tbsp marmalade zest of half a lemon and one orange

  • 8-9 pitted apricots, thinly sliced (optional, but great if you love to have few chunky bits in your cake)



For the drizzle


  • 1 tablespoon orange marmalade

  • Few tablespoonfuls of water

  • 2 heaped tables spoons icing sugar


Method

  1. Heat oven to 180 degrees

  2. Prepare the cake pan by lining with butter paper and a thin layer of butter on the sides

  3. Add the water and marmalade and stir until combined. you may heat in the microwave for a short burst for a runny consistency

  4. In a large mixing bowl, beat together the butter and sugar till soft peaks form

  5. Mix all dry ingredients together - flour, baking powder, salt

  6. Add the eggs one at a time and continue beating

  7. Mix in the flour, chopped apricots, marmalade mix, zest, honey and fold in. Do not add all ingredients at one go to avoid splitting.Reserve some apricot slices to be sprinkled on top

  8. Pour mixture in the ready cake pan, sprinkle reserved apricot slices and bake for 40-50 minutes depending upon pan depth and make. Test with a skewer or toothpick to ensure well baked cake

  9. If the cake starts burning on top, but isn't cooked yet, place an inverted cake pan or cover with foil paper to avoid charring

  10. To make the drizzle, add water to the marmalade and mix well. Add this to the icing sugar. Adjust amount of water and marmalade to suit your tastes

  11. When the cake is done, without removing from the cake pan, prick the cake at multiple places.Drizzle freely on top. Remove from the pan in 2 minutes

  12. Slice and it is ready to be devoured!
