Whole Wheat Fudgy Brownies


This is recipe is a slightly darker twist to the usual chocolate brownie. If you are a serious chocolate enthusiast, if you appreciate a gooey fudgy brownie, this is the correct recipe for you.
Ingredients:
1 cup chocolate - unsweetened, chopped into pieces
1/2 cup butter - chopped into tiny cubes
1/2 teaspoon Himalayan pink salt flakes
1 teaspoon instant coffee powder
1 cup powdered sugar
2 eggs
1 table spoon water
4 tablespoons cocoa powder
3/4th cup whole wheat flour
1/2 teaspoon baking powder
1/2 cup walnuts, roughly crushed
Method:
Melt chocolate over a double boiler.
When chocolate is just about to melt, add in butter cubes and mix with a spatula. Continue on the double boiler, on low flame, till entire chocolate and butter has melted. Add 2- 3 turns of the salt crusher, especially if using unsalted butter. Addition of salt gives a depth of flavour to the brownies
Keep aside to cool
Preheat oven to 180 degrees
In a bowl sift together flour, baking powder and cocoa
In a mixing bowl, beat eggs for 1 min using an electric beater or 2 mins if using a whisk
Add in the sugar and continue to whisk for 2-4 mins
Pour the cool melted chocolate mixture into the eggs and sugar
Gradually fold in the flour using a spatula
Mix coffee powder with a little water and add it to the mixing bowl
Fold in half of the walnuts
Pour in a lined 9x9 inch square tin
Sprinkle the remaining walnuts and bake for 28-30 mins.
Cover with a tent/steel plate or tin foil of the brownie appears to be browning mid way through.
Cool on a wire rack. Serve warm with vanilla icecream and a dash of added salt flakes for more wickedness
